BELGIUM
Belgium gets overshadowed by its neighbours (France, Netherlands, Germany), but this tiny country packs in medieval cities, incredible chocolate, world-class beer, and some genuinely lovely towns that tourists skip.
I've visited Leuven, and it perfectly represents what Belgium does well - beautiful historic architecture, student city energy, great food and beer scene, and zero crowds compared to Bruges or Brussels.
Belgium is perfect for a long weekend or as part of a bigger Europe trip. It's compact, easy to get around, and offers that perfect mix of culture and comfort that Western Europe does best.
